Ok, this is a weird food improvisation using chia seeds, any kind of fruit, and that spicy south asian hot sauce with the rooster on it. Fresca is the name of the concoction of chia seeds that the Tarahumara Indians used.
I liked it though so maybe you will also? No guarantees.
Ingredients:
- any single or combination of fruit
- chia seeds “gelled”
- spicy rooster sauce (Sriracha) or hot peppers
- organic tart cherry juice concentrate
- a squirt of lime juice (optional unless no tart cherry)
- maybe a little sugar, or just add more tart cherry concentrate
The fruit I usually use is just oranges sliced up thin but not too thin (’cause that’s what I have around at the moment), you want like spicy fruity pico de gallo kind of consistency not fruit porridge (tho that’s next).
With the chia seeds you want to put them in a small amount of water and mix them frequently at first to avoid them clumping into chia dumplings (recipe where you need chia dumplings next). Once they’ve “opened up” then you can relax and set them aside. Let them absorb water for a half hour at least.
Cut your fruits up, and put everything together in a bowl, everything to taste. No set amounts. As spicy as you like, or not. You especially don’t have to put the sugar in it. But if you do, use very light amounts. Not American amounts.
